Roasted Garlic Cauliflower

I've seen a lot of roasted cauliflower dishes, but this weekend, Kalyn posted about Roasted Broccoli with Garlic, so, since I already had a head of cauliflower in the fridge, I thought I'd switch it out and go for a similiar result.



Roasted Garlic Cauliflower

645g. cauliflower (1 medium head, cut into florets) (161.25 calories)
40 g. garlic (7-8 cloves, sliced in half and lightly smashed) (58 calories)
2 Tbsp. olive oil (240 calories)
1 Tbsp. fresh chopped parsley (1 calorie)
1/4 tsp. red pepper flakes
1/2 tsp. kosher salt
1/4 tsp. black pepper

Preheat oven to 425°F. In a small saucepan over medium heat, heat oil and red pepper flakes, add the garlic and gently fry for 1-2 minutes, making sure not to brown the garlic. Place cauliflower on a cookie sheet and pour the garlic and oil, salt, pepper, and 1/2 the parsley over the cauliflower and toss. Bake for 20 minutes, tossing halfway through, or until golden brown and tender.

Makes 6 servings, 76.75 calories per serving.

I love cauliflowers, I'll definitely try this, though of all things it's still the profiteroles that I've got to try first!!
Also I'll make some real swedish meatballs so that you can make them without any seasoning pack... it's so simple and delicious, although I don't even know what that seasoning pack tastes like, I just know what swedish meatballs are supposed to taste like ;)
and we usually serve it with cooked or mashed potatoes... mmm yummie hehehe

Hey Erin, I made some meatballs (in your honoour) ;) yesterday, so there you go, it'll probobly end up tastier and cheaper than buying a seasoningpack...
Also, I share my blog with my sis, she's got the bad cam ;) and she made the roastbeef and it's soooo good. Can't believe you don't eat red meat, it's the best (in reasonable amounts)... how come you don't??

Ooh, the red meat thing... I've never actually liked red meat, I think it's a texture thing. I was a vegetarian for a couple of years, and I just never got back into eating red meat.

So it doesn't matter if it's well done or not?
Kinda sounds like my boyfriend. He'll only eat red meat if it's well done (I call it chewy and dry), but he prefers chicken and pork, I think it's got something to do with the whole it's got to be well done because it's unhealthy to eat rare...
Me on the other hand, I love redmeat, and rare (we call them "blodig" which means "bloody" in swedish and it has always sounded more rare than the word rare to me ;) )
Anyways... I seem to use your blog almost like a diary/blog these days, confessing to things not so interesting... :)

Nope, well done is horrible, and basically inedible, but beef in-general is a little, I don't know, too meaty.. lol. If I had any will power at all, I'd still be a vegetarian.

I was a vegetarian for a while not because I think eating meat is wrong I just think eating meat in captivity is wrong... if it was easier and cheaper to eat wild animals that's all I'd eat... or atleast free range animals. Unfortunetly the meat from for instance cows that get to wander freely is harder and more expensive to get...
